El TFG propondrá un estudio dirigido a comprender cómo los consumidores españoles perciben la cadena de suministro de la miel y qué factores condicionan su aceptación de un sistema de trazabilidad digital basado en tecnología blockchain. Para ello, se planteará la aplicación de una encuesta estructurada -inspirada en el diseño metodológico del Market Survey S1 del proyecto TECHONEY, que utiliza cuestionarios distribuidos mediante plataformas digitales y adaptados al contexto local- con el fin de recoger información sobre perfil sociodemográfico, hábitos de compra y consumo de miel, nivel de alfabetización y madurez digital, así como actitudes hacia la transparencia, la autenticidad del producto y la digitalización de la cadena. El propósito será identificar patrones de comportamiento, grado de preocupación por el fraude y disposición de los consumidores a interactuar con herramientas de trazabilidad, de forma que los resultados permitan evaluar la viabilidad y aceptación potencial de un ecosistema blockchain aplicado al mercado español de la miel.
Overview (resum en anglès):
This work aims to analyse the feasibility and social acceptance of a blockchain-based traceability system applied to local honey production in Spain. To achieve this objective, a quantitative study was conducted based on a survey of 728 Spanish consumers. The data, obtained from a questionnaire developed within the framework of the European TecHoney project, were analysed using descriptive statistics, bivariate analysis, and multiple linear regression, employing IBM SPSS Statistics and Microsoft Excel.
The results show that, although a significant proportion of participants were unaware of food fraud cases in the honey sector and had limited knowledge of blockchain technology, the perception of blockchain-based traceability systems is mostly positive. Likewise, the results suggest that consumers particularly value the transparency, authenticity, and trust that these systems can bring to the product. Willingness to pay (WTP) a higher price is moderate and increases with age, while consumers who assign greater importance to traceability paradoxically show a lower willingness to bear an additional cost.
Based on the results obtained, it can be concluded that blockchain-based traceability systems have a high potential for acceptance among Spanish consumers. However, the findings also suggest that their implementation should be accompanied by strategies that minimise increases in the final price and effectively communicate the benefits associated with transparency, traceability, and product authenticity. This study provides evidence on the factors that may influence consumer acceptance of these technologies and offers useful insights to guide future digitalisation and traceability initiatives in the beekeeping sector.
